			<content:encoded><![CDATA[<p>We&#8217;ve noticed that a lot of our customers like their Mojamix SOOOOOOO much that in addition to enjoying it for breakfast and snacks, many of you are finding ways to work it into dessert.  Well, duh.  Is it any big surprise that folks consider their favorite fruits, nuts, and spices to be a special treat?  We&#8217;re all for it!  To encourage this trend, we thought we&#8217;d share a couple favorite recipes for sweet, seasonal treats that go especially well with all kinds of Mojamix.</p>

<p><strong>Frozen Peach Whip</strong></p>
<p><strong> </strong></p>
<ul>
<li>2 cups fresh peaches, peeled and sliced</li>
<li>6 dates, pitted</li>
</ul>
<p> </p>
<p> Place the peach slices on a non-stick cookie sheet and freeze. When the fruit is thoroughly frozen, place 2 cups of frozen peach slices and 6 pitted dates in a blender. Blend at high speed, tamping down as necessary, until smooth and creamy. Spoon the peach cream into dishes and top with Mojamix for a crunchy, creamy treat!</p>

<p><strong>Summer Fruit Compote</strong> </p>
<ul>
<li>1 cup fresh peaches, peeled and sliced</li>
<li>1 cup hulled fresh strawberries, sliced</li>
</ul>

<p>Combine all ingredients in a saucepan. Bring to a simmer and cook for about 5 minutes, or until fruit just becomes soft.  Use liberally as a Mojamix topper.</p>

For many years, I’ve celebrated Dia de los Muertos, the Mexican Day of the Dead. I like to remember people who have touched my life and passed on. Their pictures grace the mantle. We light candles, listen to their favorite music, and eat their favorite foods.</p>
<p> </p>
<p>This year, I wanted to have a simple meal that brought together something of everyone who we remember on this day. Mojamix fit the bill. Here’s what we had:</p>
<p> </p>
<p>A base of oats, hearty and nourishing, in memory of friend, Natasha, who supported me always</p>
<p>Apples for my grandmother, baker of pies</p>
<p>Strawberries for an old love (why? That’s private)</p>
<p>Almonds for an old neighbour who was kind, if a bit&#8230; nutty</p>
<p>Hemp seeds for my great–uncle Alex—well, I probably don’t need to tell you what HE was like </p>
<p>And Pumpkin seeds for mom, who carved with me on Halloween</p>
<p>Every</p>
<p>Year.</p>
<p> </p>
<p>Peace to you as we enter the quiet of late fall and start to prepare for winter. It’s that time of year, so watch this space for great ideas for incorporating Mojamix into your holidays. We have great ideas for everyone on your list!</p>

Voila!  MojaCake!</p>
<p> </p>
<p>Want to try it?  Here are a few tips on what to use (and not to use) to make a successful, delicious MojaMix pancake:</p>
<p> </p>
<p><strong>Go easy</strong> on the grains—rolled oats is a great choice; great granola and chocolate chomp do the trick; three brothers is frankly a little heavy in this context (although it’s fabulous with yogurt!)</p>
<p> </p>
<p><strong>Go heavy</strong> on the fruit; it adds the most sweetness and oomph to your pancake.  Pectin released from fruits during the cooking process will even help hold your pancake together.</p>
<p> </p>
<p><strong>Go moderate</strong> on the nuts.  A serving or two are great; more than that gets a little… nutty!  (Then again, to each their own.)</p>
<p> </p>
<p><strong>Forget about</strong> the hard crunchies.  Choose pecans and walnuts rather than almonds, and leave out the cacao nibs all together.  A little variation in pancake texture adds depth.  Too much variation is just unbalanced.</p>
<p> </p>
<p>And last but not least, <em>don’t</em> forget the butter!  If you use a generous amount in the pan to cook your pancakes, they won’t need any added on the plate—so you can eat them sitting down with syrup, or stick them in a container to snack on anytime.  These make a great portable treat.  If you really want to live it up, use your favourite filling to try a MojaMix pancake sandwich—once you’ve had a MojaMix pancake with rolled oats, hazelnuts, pecans, strawberries, raspberries, and blueberries inside and  slathered with <a href="http://en.wikipedia.org/wiki/Nutella">Nutella</a>… well, there’s just no going back.</p>

And of course, that deep red color means they are full of antioxidants too.</p>

<p>Strawberries are a particularly great fruit to enjoy dried, which is how you&#8217;ll find them in your Mojamix.  With their thin skin and fragile structure, strawberries only last a few days after picking and are easy to damage.  Most strawberries you buy in a supermarket are picked a bit before their peak to facilitate shipping, but strawberries that will be dried can be picked at the absolute height of ripeness (and, therefore, sweetness).  The process of drying intensifies their flavor, creating a powerful punch of berry goodness with every breakfast bite.</p>
<p> </p>
<p>Here’s a hint for adding strawberries to your MojaMix:  for a slightly subtle strawberry presence, add one portion per bag.  For a stronger hit, add two.  And if you want the taste of strawberries to provide most of the flavor—and sweetness—in your mix, add three.   Enjoy!</p>
